How to Prepare Varagu Arisi Pulao /Varagu Arisi Vegetable Rice?
Kodo millet (Tamil: Varagu), the wild cereal, has medicinal properties that can help diabetics
and even the obese
It is rich in protien, fiber and minerals and vitamins. The fiber content of the whole grain is very high. Kodo millet also contain high amounts of polyphenols, an antioxidant compound.

Kodo millet (Varagu) - 1/2 cup
Water - 1 1/2 cup
Curd - 1 1/2 tbsp
Oil - 1 1/2 tbsp
Salt - as per taste
Cumin seeds - 1 tsp
Cinnamon - 1 inch piece
Cloves - 2
Bay Leaf - 1
Turmeric powder - 1/4 tsp
Coriander Powder - 1 tsp
Onion - 1 big
Potato - 1 potato
Carrot - 1 carrot
Beans - 5
Peas - 1/3 cup
Ginger - 1 inch piece
Green chilli - 2
Curry leaves - a sprig
Coriander leaves Preparations:
1.Soak the Kodo millet in water for 30 minutes.
2.Slice onions finely and keep it aside.
3.Peel the skin and chop carrots , potato and Ginger into small pieces
4.Cut the Green chilli in lengthwise
5.Finely chop beans and keep it aside.Method:
1.Heat oil in a pressure pan, add bayleaf, cumin seeds, cinnamon and cloves.
2.Now add the onion, green chillies and fry for few mins.
3.Then add the chopped veggies.Fry for 2-3 minutes
4.Now add turmeric powder, coriander powder.
5.Add the curd and Mix well.
6.Now add exactly 1 cup(2 times of varagu) of water and allow it to boil.
7.Now add the washed millet and required salt.
8.Close and pressure cook it for 3 whistles.
9.Once the pressure subsides, open the cooker.
Garnish with finely chopped coriander leaves
Serve hot with pachadi( raitha)
